Basic Clean Eating Mini - Muffin Recipe
(makes 12 mini-muffins)
Ingredients:
1/2 cup natural peanut butter
1 medium ripe banana
1 large egg
1/2 teaspoon vanilla extract
2 Tablespoons of sweetener (honey, agave nectar, or maple syrup)
1/4 teaspoon baking powder
Directions:
Preheat the oven to 400 degrees.
Spray muffin tin with cooking oil.
Set aside.
Place all ingredients in a mixer or blender.
Blend until smooth.
Fill each mini-muffin cup.
Place in oven and bake until thoroughly cooked, about 8-10 minutes.
Note:
Any nut butter can be substituted for the peanut butter.
The centers can be filled with jams or fruits as desired.
